One simple rule of thumb for identifying wild mushrooms, is the smaller the pattern on the cap, the more unique the mushroom is. Look for an abundant amount of dark oriented cap not only for a reminder of the finder, but also for its overall healing power.

One other thing worth noting is that due to the popularity of morels, they are sometimes used to disguise the taste of other fungus. This is a very useful technique for cooks that are trying to hide the taste of saffron or any other flavor producing substance.

Fungi, wild morels, is a term that is thrown around quite loosely. But, the strictest and most reputable suppliers would be mushroom from a known supplier. This is important for two reasons.

First, you are not likely to be able to find 100% genuine morels, and there are NO proven ways to distinguish them from factories and/or weeds. So, you cannot be 100% sure that what you are getting is truly morels.

Second, you cannot make money off of selling the fungus for something that you know is a delicacy. Selling non-authentic morels would be a lot of fun, but is not something that anyone is planning to do. However, new varieties of morels do continue to grow, so you may not be able to stop them from happening.

Some people do try to deceive themselves into thinking they are eating authentic morels when in fact they are not. For instance, some think they are eating Japanese apron mushrooms, so are not really genuine.
